pani popo


One of my favorite treats I discovered while living in Hawaii is Pani Popo (Hawaiian Coconut Bread).  It's really yummy, quick and easy to make.  It's sweet enough that you'll want to eat it as a dessert.

INGREDIENTS 

  • 1 (12 ounce) package frozen dinner rolls, thawed
  • 1 (10 ounce) can coconut milk
  • 3 tablespoons sweetened condensed milk
  • 3/4 cup white sugar, or to taste

DIRECTIONS

  1. Coat a 9x13 inch baking dish with cooking spray. Coat your hands with cooking spray or shortening, and roll the dough balls in your hands so that they have a light coating. Place in the prepared dish. Set aside in a warm place to rise until doubled, up to 2 hours.
  2. Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, stir together the coconut milk, sweetened condensed milk and sugar. Pour this mixture over the top of the rolls as evenly as you can.
  3. Bake for 30 minutes in the preheated oven, until golden brown. Let cool for a few minutes before separating and serving.

This is sooo yummy, we used to eat it when we were in Samoa. I'm so glad you reminded me and shared the recipe. I'll have to make it again.

I wonder who came up with Pani Popoi first? Hawaiians or the Samoans? :) Did I know you lived in Samoa? I'm jealous...I'd love to go.

Hi! Well, may I just say first, thank you for flying by my blog and your funny comment - good luck to your hubby! Secondly, you have my dream job. Since I was a little girl, I always wanted to be a flight attendant. But, alas, I was a big girl and never would make the weight. I am stupid about flying...I can't get enough of it! I even will sit at Sky Harbor with my radio that picks up the pilots/control tower and just watch them take off and land.... I don't get to fly much (teacher), but recently got to go to Minneapolis... the best part? The flight... soaring high.... the views... I just love the thrill of it all! So I'm happy to be able to 'fly' with you on your blog! Thank you for leaving a comment - otherwise I would have never found your blog and begun some new traveling! : ))

How funny... I remember how excited I would get going to the airport before I became a flight attendant. I wondered where everyone was going. I'm usually in a hurry now. Maybe I need to slow down. :)

We have lots of ex teacher flight attendants. In college I was going to go into Education (history) or Tourism. I chose Tourism.

I buy the coconut milk at Walmart. I think it's in the Asian/specialty section.
